Most shops count everything once a year, close for a weekend and still end up arguing about the numbers. A rolling count spreads the work across the month so the shelves stay open and the totals stay honest.
Start with what moves fastest
Pick the twenty items that sell most. Count those every week, count the middle of the range every month, and leave slow movers for a quarterly pass. The fast movers are where a missing carton costs you the most.
Count at the same time each day, ideally before the first customer. Write the number you see before you look at what the system says. That one habit removes most of the arguments.
Let the till do the arithmetic
When a count differs from the system, record an adjustment with a reason: damaged, expired, miscounted. Over a few weeks the reasons tell you whether you have a theft problem, a receiving problem or just a habit problem.
